Ingredients:
7 ½ lb. pork shoulder
Stuff into pork:
6 cloves garlic – chopped
1 bunch of Italian parsley – chopped
¼ cup parmesan cheese
Rub:
1 ½ tablespoons salt
1 tablespoon black pepper
1 ½ tablespoons chili powder
1 tablespoon Living the Gourmet Dry Herb Rub
Juice of 1 lemon
Drizzle of olive oil
Preheat Oven 350 degrees:
Make pockets in the pork and stuff the chopped garlic into the pork.
Combine the cheese and parsley and stuff into pork.
Place the pork on a rack in a baking pan.
Combine all of the ingredients for the rub in a small bowl and rub all over the pork.
Cover the pork with aluminum foil and add 2 cups of water in the pan.
Bake for one hour covered, then lower the heat to 275 degrees and uncover the pork.
Finish cooking the pork at 275 degrees. The internal temperature of the pork should reach 195 degrees F.
This is a dinner that requires patience and is worth waiting for!

Roasted Stuffed Peppers
Ingredients:
7 Peppers – these can be any pepper type of you choose.
Stuffing:
1 bunch of Italian parsley
Healthy handful of fresh basil
6-7 garlic cloves
1 tablespoon of pimento olives
1 tablespoon of sun dried tomatoes
2 oz. can of anchovies in olive oil
½ cup Parmesan cheese
Drizzles of olive oil
1 cup of grated Monterey Jack cheese
Preheat Oven 350 degrees:
Place all of the ingredients for the stuffing in a food processor and give a few good chops.
Halve the peppers and take the stems out.
Place on a baking sheet.
Drizzle the peppers with olive oil.
With a teaspoon stuff the peppers. Top with the grated Monterey cheese.
Drizzle a little olive oil over the peppers and bake 20-25 minutes.
These make a delicious appetizer or side.
