Ingredients:
1 lb. of your favorite macaroni
For the Food Processor:
Healthy handful of fresh basil
Healthy handful of fresh parsley
4 cloves of garlic
1 tablespoon of sun dried tomatoes
2 vine ripe tomatoes
16 oz. of cottage cheese
Cheese Sauce:
½ cup of grated Parmesan
8 oz. of Monterey Jack – grated
1 cup of milk
Topping:
1 cup of Italian style croutons – processed
Preheat Oven 350 degrees:
Prepare the macaroni as directed and set aside.
Prepare a baking dish with a drizzle of olive oil or buttered.
Combine all of the ingredients for the food processor and give a few good chops.
Place in the baking dish and add the milk, Parmesan cheese and grated Monterey Jack cheese and stir. Add the macaroni and toss.
Top with the croutons and place in the oven for 25 – 30 minutes.
This is a nice side dish.

Sounds really good. In a lot of your recipes you have stated using monterary jack cheese. We don't have this in the UK so can you tell me what sort of cheese it is so i know what to use as an equivalent. Thanks
