Ingredients:
3 carrots – sliced
3 stalks of celery – sliced
½ onion – sliced
4 cloves garlic – chopped
9 oz. box of frozen creamed spinach
1 cup of chicken broth
1 cup of milk
1 tablespoon of butter
Drizzle of olive oil
¼ cup parmesan cheese
Dash of salt
Dash of black pepper
Dash of nutmeg
Dash of red pepper flakes
1 lb. of your favorite noodles
Heat a large frying pan with a tablespoon of butter and a drizzle of olive oil. Add the carrots, celery, onions and garlic. Sauté until the onions are soft. Add the frozen spinach with the heat on low to soften.
When the spinach is incorporated; add the chicken broth and simmer on low.
Add the milk, parmesan cheese and the seasonings continue to simmer on low for a few minutes then set aside while preparing the noodles.
Add the noodles to the spinach sauce. Garnish with grated cheese.
This is a nice side dish.
