Ingredients:
3 lbs. sliced boneless pork
Marinade:
1 ½ cups ginger ale
2 inch piece of fresh grated ginger
Juice of 1 lemon
Zest of 1 lemon
Juice of 1 lime
Zest of 1 lime
4 cloves of garlic – chopped
½ cup vinegar
1 tsp. ground coriander
1 tsp. ground cumin
1 tsp. salt
½ tsp. black pepper
1 tsp. sugar
For the Rice:
2 cups uncooked rice
1 red onion – sliced
1 ½ cups frozen corn
1 grilled jalapeño – sliced with seeds
4 cloves garlic – chopped
½ cup dried pineapple
½ cup dried cranberries
2 stalks celery – chopped
Handful of fresh basil – chopped
½ tsp. ground coriander
½ tsp. ground cumin
½ tsp. salt
¼ tsp. black pepper
½ tsp. brown sugar
Olive oil for drizzling
Combine for the Rice:
1 tablespoon sugar
¼ cup vinegar
Dipping Sauce:
1 cup of ketchup
1 grilled jalapeño – chopped
1 inch piece of fresh ginger – grated
2 cloves of garlic – grated
1 tablespoon of brown sugar
Dashes of ground cumin
Dashes of cloves
2 tablespoons of vinegar
Combine all of the above in a bowl and stir.
Process:
Combine all of the ingredients for the pork marinade and place the sliced pork in the marinade. Refrigerate for at least one hour or longer.
Heat a griddle and place the pork slices on the hot griddle to grill.
For the Rice:
Cook the rice in a rice cooker or as directed.
Heat a large frying pan with a drizzle of olive oil.
Add the onions, celery, garlic and grilled jalapeño. Sauté until the onion is soft.
Add the pineapple and the cranberries. Add the cooked rice and the seasonings and toss.
Combine the vinegar and sugar and add and toss.
Add the fresh basil and again toss.
If you like a little sweet and a little spice in your life this meal is for you. Remember you can adjust the seasonings to your liking.
