~ Summer Salad Wrap ~

Ingredients:
Tortilla wraps
Ground chicken
Crispy bacon
Shredded romaine or iceberg lettuce
Mayonnaise
Sweet pickles
Crumbled Blue cheese
Red Onion
Fresh basil
Honey
Lemon juice
Vinegar
Red pepper flakes
Ground cumin
Olive oil
Sauté the ground chicken with a drizzle of olive oil, salt and black pepper; set the chicken aside. 
Cook the bacon and lay it on paper towels; set the bacon aside.
Gently, sauté the red onion with the basil and a drizzle of olive oil; set this aside.
Mix the onion and basil with the ground chicken.  Drizzle fresh lemon juice, a drizzle of honey, a little vinegar and dashes of ground cumin over the mixture  and toss.
Heat the tortilla wraps.
To build the Wrap:
Brush the wrap with desired amount of mayonnaise. 
Place the shredded lettuce on the wrap.
Add the ground chicken with basil and onion.
Top this with the bacon and sweet pickles.
Add the blue cheese and fold.
This is a great treat for a cool summer meal.

    Catherine maybe sometime you'll make a post with various types of pickles and recipes on the brine used..it would be interesting :).

    Thanks for sharing this recipe. I have been having wraps for my lunches lately, but find it hard to come up with interesting and different things to put in them..so this will be perfect! 🙂

    I love this idea Catherine, it's very colorful and nourishing but what do you mean by sweet pickles please> Where I come from all pickles are sour..it's true we also pickle red melons, they are a delicacy, but I am intrigued to discover what is your version of sweet pickles. Kisses.

    Great foodie minds think alike Catherine! For lunch I ate a wrap very similar to your delicious one here. Feta instead of bleu cheese and no onions.
