Ingredients:
8 oz. Munster cheese – shredded
3 cups of milk
2 tablespoons of butter
1 medium red onion – sliced
1 pint of button mushrooms – sliced
½ jalapeño – chopped with seeds
4 cloves of garlic – chopped
29 oz. can of red beans - drained and rinsed
2 cups of corn flakes – crushed
Romano cheese - for grating.
Olive oil – for drizzling
1 lb. of your favorite macaroni
Preheat Oven 325 degrees:
Prepare macaroni as directed and set aside.
Heat a large frying pan with a drizzle of olive oil. Add the sliced mushrooms, garlic, jalapeño and onions to sauté until the onion is soft and the garlic fragrant.
Add the milk and the butter and the beans and stir.
Butter a large baking dish. Add the cooked macaroni and top with the milk mixture and shredded cheese and half of the crushed corn flakes and toss. Grate Romano cheese over the top and toss. Top with the rest of the crushed corn flakes and more grated Romano cheese.
Drizzle olive oil over the top and bake for 20 – 25 minutes.
This is a fun and easy way to dress up macaroni and cheese.
