Zest of ½ lemon
Juice of 1 lemon
¼ cup of grated Romano cheese
2 tablespoons of honey
3 vine ripe tomatoes – diced
Dashes of fresh ground black pepper
Olive oil

Rub for the top of the pork:

Drizzle of olive oil
Dashes of dried oregano
Dashes of paprika

Preheat Oven 350 degrees:

Combine all of the ingredients for the stuffing and mix.

Find the seam in the pork roast and make a pocket for the stuffing. Fill the pocket with the stuffing.

This is very delicious treat for the family.

Wow - a tomato stuffing. A summer beauty - and have all in my garden (well, not the honey - but I know where I can find some).

Catherine... First the Broccoli Rabe side dish, now the entree! Terrific recipe and the finished roast looks great... Take Care, Big Daddy Dave

I'll bet your place smelled fantastic while this was cooking. It's gorgeous. What a perfect main dish to serve guests; or just family for that matter. Thanks Catherine!
