1 cup of dried lentils – soaked in water for at least 1 hour
1 onion – sliced
5 cloves of garlic – crushed & chopped
1 healthy handful of Italian parsley – chopped
1 vine ripe tomato – chopped
Juice of ½ fresh lemon
½ cup chicken broth
Dashes of fresh ground black pepper
Dash of sea salt
Dashes of ground curry
Dashes of chili powder
Dash of red pepper flakes
Drizzles of olive oil
Heat a medium sauce pan with a drizzle of olive oil and place the onion, garlic and parsley and sauté until the onion is clear on low.
Add the lentils, tomato, chicken broth, lemon juice and seasonings: continue to simmer on low for about 45 – 50 minutes.
Serve this as a side dish with an extra drizzle of olive oil. The flavors are wonderful and hearty.

This looks like a really warming and tasty dish, especially for this time of the year. I am in the habbit of always having lentils in the cupboard as I often use them for thickening in casseroles. I think that they have recently become more popular as the price here in Britain has gone up by quite a lot over the last six months or so.
