Quick Griddle Capanata:
2 peppers – sliced
2 cloves garlic – crushed & chopped
½ cup parsley – chopped
1 onion – sliced
½ cup olives – chopped
1 tablespoon – capers
1 teaspoon dried oregano
½ teaspoon red pepper flakes
Olive oil for drizzling
Omelet:
2 eggs plus 1 tbs. water – beaten
Olive oil for pan
Grated mozzarella cheese
On a heated griddle, drizzle a little olive oil. Place all of the veggies and let char a little.
In a heated frying pan place a drizzle of olive oil and pour in the beaten eggs. Let the eggs become firm enough to flip gently, and then plate. Sprinkle a little shredded mozzarella, veggies and then fold over.

Oh man Catherine, this looks divine! My grandma used to make these when I was little girl, minus the capers. Believe it or not, she served it with smoked mackerel and fried potatoes.

This is like my perfect meal. I just adore any kind of egg based dish, and I love caponata. What time should I come over for dinner?
