Ingredients:
Sliced Red Onion
Fresh Basil
Eggs
Olive Oil
Heat the griddle with olive oil. Place the red onion slices on the griddle and the fresh basil. When the onion becomes a little soft crack the eggs over the onion and basil and turn the griddle off. The griddle will be hot enough to finish cooking the eggs.
Prepare your favorite toast and you are in for a treat!

I like to do what I call an asian scramble. It's scramble egg, sambal, green onion and sesame oil. It's a great twist on the usual egg dish!
