2 cups pork – cooked and sliced
1 medium onion - sliced
4 cloves garlic – crushed & chopped
1 tomato - sliced
½ jalapeño – sliced
1 Italian green pepper – sliced
½ cup fresh parsley – chopped
½ teaspoon red curry paste
3 tablespoons olive oil
Flour Tortillas
Heat the olive oil in a large frying pan and place the garlic, onion, jalapeño, tomato and parsley and sauté until the onion is golden on the edges.
Add the pork and the curry paste and toss until the pork is thoroughly heated.
Heat the tortillas on a griddle and fill with the pork and veggies.
This is a festive and fun way to make use of leftover pork!Enjoy!
