Adapted from the box of: Kellogg’s Corn Flakes
Ingredients:
3 lbs. Chicken breast
7 cups corn flakes
1 egg
1 cup milk
1 cup all-purpose flour
1 tsp. paprika
1 tsp. chili powder
1 tsp. garlic powder
1 tsp. fresh ground black pepper
Olive oil – drizzling
Corn Flake Chicken Preparation:
Preheat Oven 350 degrees:
Place the corn flakes in a food processor and add the spices. Give a few chops. Do Not over process the corn flakes and make them too fine.
Combine the egg, milk and flour in a bowl and mix until smooth. Dip the chicken in the batter and then coat with the cereal.
Drizzle a little olive oil in the bottom of a baking dish and place the chicken in the baking dish. Drizzle a little olive oil on top of the chicken and bake for about 45–50 minutes or until the juices run clear. Let the chicken rest, before serving, for about 5-10 minutes after taking it out of the oven.
Sweet Garlic Broccoli
Ingredients:
1 bunch of fresh broccoli
7 cloves of garlic – chopped
1 tablespoon brown sugar
1 tablespoon lemon juice
1 cup of water
Heat a saucepan with a drizzle of olive oil and place the broccoli in the pan. Add a cup of water and cover. In a small bowl combine the brown sugar, lemon juice and garlic. Add to the broccoli and steam for about 5-6 minutes. Do not overcook the broccoli. Let it remain a beautiful green.
This chicken and sweet broccoli is delicious. I guarantee that you will be asked to make it again!
Enjoy with Much Love,
Catherine
