These Carrot Spelt Muffins are warm and delicious, especially when served with Finlandia butter!
The old cliché is that March enters as a lion and departs as a lamb. However, March’s wrath has persisted to the bitter, icy end this year, at least where I am, with two snow falls inside of these past two weeks.
As I sit writing this, it has just become April, and I am clad in a bulky sweater-jacket, which I have no desire to shed despite the lengthening days.
While part of me no doubt longs for the balmy warmth of summer against my skin. I can’t help the anticipation of once again being able to sit on my back porch and watch as the sun ripples across the canal while seagulls drift lazily on the salty air, cawing down at the world below. Yet, if I am to be honest with you and with myself, part of me will miss the winter.
I will miss the coziness of the winter nights, curling up and watching an old movie with a hot cup of cocoa; waking up to the gray mornings with the ground blanketed in white...I will especially miss baking fresh breads and muffins, as they are the comforts of my soul.
These carrot spelt muffins were made in celebration of Spring and the Easter holiday, but they are also a final nod to Old Man Winter.
Warm and fragrant, the house filled with the sweet aroma of cinnamon, but these muffins were made complete with Finlandia butter.
From the moment I tried Finlandia, I could taste the difference. It was creamier and richer than any other butter I have tried. I firmly believe that using good quality butter really makes a difference in everything you make.
Finlandia is known for its cheeses, but once you try their fresh imported butter, you will see that their esteemed reputation is reflected in the quality and craftsmanship behind each of their products. Like most products Living the Gourmet is proud to support, Finlandia is all-natural, made from pure milk from family-owned farms.
Whether over crusty French bread, or these carrot spelt-muffins, the possibilities for enjoying Finlandia butter are limitless.
How will you enjoy Finlandia butter?

Now I just want to sit on that back porch with you, gaze at the canal, breathe in the salty air....hear the gulls. I too love winter, and we've also had snow twice this past week. When spring finally arrives, I know I'll be ready though. These muffins look lovely and I'm so glad to learn about Finlandia butter. Looking forward to trying the muffins and the butter. Mmmm...

I believe I have seen this butter in the store. I will try some next time I need butter. It is SO windy here, too. I think Sunday will blow all the little children over who are attending the Easter Egg Hunts.

Dear Catherine,
Such a lovely post. I also will miss the winter somewhat. I love what you said about the cozy nights, etc. I really am a winter person, but spring is coming, slowly but surely. These Carrot Spelt Muffins look amazing and would make a delicious morning breakfast (or snack) with a cup of tea or coffee. I have used Finlandia products many times. But as a butter I have never used this brand. I agree with you that you need to use quality butter for cooking and especially for baking. That is so nice of Finlandia to want to share a gift with us. I already checked out their site and also tweeted your post. Thank you for sharing this yummy muffin. (Carrot is one of my favorites) Have a good week, and a blessed Easter holiday.
Dottie 🙂

Catherine, We still haven't tried using spelt flour. Great looking muffins! We buy 2 lb. rounds of Amish butter locally here in East Tennessee. The cost is reasonable and the butter beats any of the commercial brands. Finlandia sounds like its worth trying too! Quality butter does make a differrnce! Take Care, Big Daddy Dave
