These Carrot Spelt Muffins are warm and delicious, especially when served with Finlandia butter!
The old cliché is that March enters as a lion and departs as a lamb. However, March's wrath has persisted to the bitter, icy end this year, at least where I am, with two snow falls inside of these past two weeks.
As I sit writing this, it has just become April, and I am clad in a bulky sweater-jacket, which I have no desire to shed despite the lengthening days.
While part of me no doubt longs for the balmy warmth of summer against my skin. I can't help the anticipation of once again being able to sit on my back porch and watch as the sun ripples across the canal while seagulls drift lazily on the salty air, cawing down at the world below. Yet, if I am to be honest with you and with myself, part of me will miss the winter.
I will miss the coziness of the winter nights, curling up and watching an old movie with a hot cup of cocoa; waking up to the gray mornings with the ground blanketed in white...I will especially miss baking fresh breads and muffins, as they are the comforts of my soul.
These carrot spelt muffins were made in celebration of Spring and the Easter holiday, but they are also a final nod to Old Man Winter.
Warm and fragrant, the house filled with the sweet aroma of cinnamon, but these muffins were made complete with Finlandia butter.

Ingredients
For Carrot Spelt Muffins:
- 21/4 cups spelt flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, firmly packed
- 11/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 large eggs
- 3/4 cup milk
- 1/3 cup Finlandia unsalted butter, melted and warm (not hot)
- 1 cup grated carrots
For the Topping:
- 1/4 cup oats
- 1/4 cup brown sugar
- 1/4 cup plain flour
- 21/2 tablespoons Finlandia unsalted butter
Instructions
- Preheat oven to 400 degrees F. Lightly grease a 12-well muffin tin, or line the tin with muffin cups.
- In a medium bowl, whisk together the dry ingredients. Set aside.
- In a small bowl, whisk together the eggs, milk, and butter.
- Stir the wet ingredients into the dry ingredients, then fold in grated carrots.
- Divide the batter among the muffin cups, filling them quite full.
- Combine all of the ingredients for the topping in a food processor. Process until a crumble-like mixture is formed. Sprinkle evenly over each muffin.
- Bake the muffins until the cake tester comes out clean, about 20 minutes.
- Remove the muffins and let cool slightly before serving.
- Serve with a pat of Finlandia butter and a cup of your favorite tea or coffee.
