We're bringing the heat today with oven-baked turkey wings that are seasoned in a sweet-and-spicy marinade then served alongside some of our favorite Karma hot sauces.
Trends come and go but sometimes some stay around and become staples. One such trend is the Western discovery of hot sauce.
It all started with a red bottle of Sriracha some fateful years ago (not even Tabasco, the oldest hot sauce company in existence, could compete), and ever since then the demand for hot sauce took off like a supernova leaving in its wake a blazing trail of fire and a fierce demand for more.
With this sweeping trend, came a generation of hot sauce fanatics. From hot sauce groupies who have set out to create a national 'hot sauce map' to the cult-favorite Youtube show, Hot Ones, there is no sign in sight that the hot sauce trend is cooling down anytime soon.
In fact, we can barely keep up. Note that it's estimated that there are over 50,000 different types of peppers in the world.
To some degree we all appreciate a little heat, but there are hot sauces out there that exist 'just to watch the world burn.' Then there are others that bring the heat and equally bring the flavor. The science behind developing a flavor that can shine through a scoville level of 100,000 still kind of fascinates me. Forgive my food nerdiness here, but knowing how to cut through heat while preserving the purist flavors of a sauce is impressive.
By no means am I a hot sauce aficionado, but I do appreciate my spice. So, when we received this coveted set of Karma Sauces, I was equally nervous but intrigued to sit down and test my own limits.
I really feel like Karma Sauce needs no introduction here, but for those who aren't familiar with the web series, Hot Ones, then this one is for you.
To begin, Karma Sauce has its own farm and on this private micro farm, they harvest their own veggies and peppers to ensure every ingredient is succulent and fresh. All their products are gluten-free, wheat-free, soy-free, dairy-free and preservative-free.
Three kits are available- the Starter Kit, the Harder Kit, and then the Nightmare Kit.
While each bottle offers varying levels of heat, they also offer unique and delicious flavors. My personal favorite from today's feature is the Ghost Island, but let's break down each bottle's flavor profile...
Bad Karma - This award winning hot sauce is a step up from the Good Karma hot sauce. It's not overwhelming and if you're looking for a simple, more versatile sauce that brings the heat, this one is for you. It boasts of red habanero and bell peppers with some subtle sweeter undertones.
Huhu Pina - Yes, this may say mild but it's actually packed with a lot of flavor and a surprisingly good amount of heat. It's the bottle of pineapple hot sauce you didn't know you needed. It's spiced up with Korean gochugaru (a Korean chili pepper for those who might be confusing it with gochugang sauce), sweet notes of pineapple, agave nectar, and marjoram.
Cosmic Dumpling - A close runner-up to being my personal favorite, this sauce is the perfect blend of my favorite East Asian flavors- soy, chili, ginger, and just a hint of orange too. It's delicious not only alongside dumplings, but a variety of other dishes like ramen, eggs, steak, or in today's case, wings.
Ghost Island - The first time I tried this West Indies inspired sauce, my foodie senses lit up. I hadn't had a hot sauce this uniquely flavorful in a long while. It boasts of a trio of hot peppers- habanero, fatalii, and ghost, but tones it down with its signature Caribbean flavors- curry spices, mango, and pineapple. I also love the thicker, mustardy consistency. It packs a bit more heat, but it's one of those sauces where you just can't help but dabbing it on for more.
For today's post I create a spread that reflects the extensive versatility of each sauce with home-baked fries, a cool and refreshing tomato salad, and of course, my signature homemade flatbreads.

Spicy Turkey Wings

Ingredients
- 3.5 - 4 lbs. of fresh turkey wings - tips removed and split at joint (I left a few wing tips on)
For the Marinade:
- 5- 6 cloves of garlic
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. red pepper flakes
- 1 tsp. black pepper corns
- Fresh nutmeg - grated ( about 3/4 tsp.)
- 4 tbs. Teriyaki Sauce
- 1/4 cup honey
- 2 tbs. lemon juice
- 2 tsp. apple cider vinegar
Instructions
- Combine all of the ingredients for the marinade in a bullet blender or food processor and give a few good chops.
- Place the prepared wings in a freezer bag and add the marinade. Rub the marinade into the wings and seal.
- Place the wings in the refrigerator for at least one hour or up to overnight.
- Preheat the oven to 325 degrees F.
- Place the wings in a baking dish.
- Cover the baking dish with tin foil and bake for 1 hour and 30 minutes.
- Uncover and finish baking for 30 minutes.
- Serve with your Karma Hot Sauce.
