Breakfast is one of my favorite meals. I wake up thinking, “what to have”. Sometimes the local bagel shop, which is thoroughly delicious place, is on my mind. I love saying, “hello” to the people who work there. They are so nice and I have known them for literally years. They watched my children grow. I guess I am dating myself, but it is like the show Cheers, where everyone knows your name. This was a comforting place to go following the storm. Everyone showed their genuine concern and care.
This morning though, I am thinking in the terms of using the potatoes with brussel sprouts. I think this should be a lovely little meal to start a day.
Brussel Sprout Home Fries and Eggs~
Ingredients:
2 eggs
For the Potatoes:
8 red potatoes
3 cloves of garlic
1 onion – sliced
Dashes of salt
Dashes of black pepper
2-3 tablespoons of olive oil
About 12 brussel sprouts – sliced
2 tablespoons of vinegar plus a teaspoon of sugar
Boil the potatoes in salted water until fork tender, drain and let cool, then quarter the potatoes.
Heat a large frying pan with the olive oil and add the sliced onions. Sauté until the onions are golden, then add the garlic and sauté until the garlic is fragrant.
Add the potatoes and continue to sauté on medium heat. Let the potatoes get slightly golden and then add the sliced brussel sprouts.
Add the dashes of salt and pepper to the pan and toss.
Combine the vinegar and sugar and stir and then add to the pan and toss.
Cook until the sprouts are slightly wilted.
This can be served as a side dish for dinner also.
Prepare your eggs the way you like them.
Serve with a good cup of coffee and toast.

Hi Catherin, love your scrumptious breakfast. Great to go with a cup of hot coffee. Breakfast is the most important meal of the day and best to take before 11am.
I love eggs anytime of the day and everyday too. I can live without eggs. Make extra for me please! 🙂

Sounds great but I think I would be more inclined to have it for dinner than breakfast...I like to have my breakfast as soon as i get up and this would take too long for me to get ready. Plus I'm not really in the mood too cook at 6am!!

I think we all need those small neighborhood places where they know us by name. I always choose a place like that instead of a big box store!
