During the months of the storm we did consume a fair share of pizza. I love our local pizzeria, it is called Joe’s. It is a small place and the people are kind. Once again, they have watched my children grow up. The greeting’s are on a first name basis and I feel welcome and appreciated. I feel like cooking and I desire pizza, yet, I really don’t feel like waiting, (hoping) for the dough to rise. I really enjoy my visit to Joe’s; therefore I shall buy the dough and cook the pizza myself. And this is called the best of both worlds.
2 fresh pizza dough’s
4 vine ripe tomatoes – sliced thin
16 oz. mozzarella – shredded
Grated Romano cheese
6 sausages – 3 hot – 3 sweet
1 large onion – sliced
1 bell pepper
4 cloves garlic – chopped
¼ tsp. salt
¼ tsp. black pepper
¼ tsp. dried oregano
Corn meal for dusting
Olive oil
Heat a large frying pan with 2 tablespoons of olive oil. Over a medium heat, add the sliced onions, peppers and chopped garlic to sauté until the onions are clear and slightly golden. Add the sausages and cook until the sausages are done. Slice the sausages when they are cooked and return them to the pan and set aside for the pizza topping.
Preheat Oven – 375 degrees:
Dust the pizza pan with cornmeal.
Form the pizza dough to fit the pizza pan.
Place in the oven for about 5 – 8 minutes to bake before putting the toppings. This will give the crust some firmness.
Remove from the oven. Divide the slices of two of the tomatoes on each pizza. Top with the sausage and peppers, shredded mozzarella, grated cheese, a few extra dashes of seasonings and a small drizzle of olive oil.
Bake for about 20 minutes until the crust is golden.

We love to make our own pizza bit I must admit that I usually cheat and buy ready made pizza basis. I'm not sure if we can buy pizza dough but I am going to look into it next time I'm in town!! The topping sounds wonderful and has given me some new ideas!!
