    Iceberg Lettuce Salad

Written by Living the Gourmet, a trusted food and lifestyle site since 2008.

Sometimes it is easy to get caught up with the latest craze.  The latest craze usually means you will pay more money and usually in my case crave the old. New doesn't always mean better you know.  The old usually is comfortable, warm and familiar and the other side of the street is not always that welcoming. You have to learn new taste all over and usually that takes a lot of time and let's faces it at a certain age, you don't feel like it!
Well, the iceberg lettuce was on sale at the local grocers and I bought it. I decided to dress it up and show this "old girl" still can strut her stuff!!  She had snap and pizzazz she crunched and knew she was sassy and showed that with age comes knowledge that you know where you came from and where you are going and you know you have it!  And you didn't have to work hard to please. You Go Girl!!
    Ingredients:
1 head of ice berg lettuce - quartered
    2 Kirby cucumbers - quartered
    Handful of radishes - sliced
    1 red onion - sliced
    Fresh grated Romano cheese
    Dressing:
    Juice of 1 lemon
    ¼ tsp. salt
    ¼ tsp. black pepper
    2 tablespoons of olive oil
Quarter the lettuce and arrange on a platter.  Add the cucumber, radishes, onions and grated cheese.  Finish with the dressing.
    Enjoy with Love,
    Catherine
