Open Faced Meatball Sandwich
Sometimes life starts out in a direction and you think that direction is set. Your dreams have come true. You see it carved out in your mind and you think, I only have to live this dream through. Then, your dream starts to slip and you are not sure why. You begin to doubt and to think and over think, and your world starts to shift. You become slightly weary and doubtful of your decisions, yet you go on, day to day.
You are grateful for your faith as your companion in these times and for your belief in miracles. It is like the story of Peter, when he was asked to walk out on the water and ultimately sank; he doubted. In these times it is easy to doubt and be anxious, yet these are the times one must carry on through faith.
Ingredients:
2 ¾ lbs. ground beef
4 cloves of garlic – chopped
¼ cup of chopped Italian parsley
¼ cup grated Romano cheese
4 sliced of white bread
½ cup of milk
½ cup of instant potatoes or ½ cup Italian style bread crumbs
3 eggs
½ tsp. salt
½ tsp. black pepper
½ tsp. paprika
½ tsp. garlic powder
2 tablespoons olive oil
For the Sandwich :
Left over tomato sauce or ketchup
Shredded mozzarella or your favorite cheese
Your favorite bread
In a medium bowl; crumble the sliced bread and soak the bread in the milk.
Place the ground beef in a large bowl. Add the eggs, grated Romano cheese, parsley, garlic, and instant potatoes or bread crumbs. Add the bread soaked in the milk. Add the seasonings.
Mix the meat thoroughly and form into meat balls.
Heat a large frying pan with the olive oil. Add the meatballs, but do not overcrowd the pan.
Toast the bread and place the sliced meatballs on the bread top with sauce or ketchup and the shredded cheese.
