I would like to share a post in Long Island's Newsday, featuring me. I hope that this will be a way for you to know the person behind Living the Gourmet better.
3 lb. center cut pork loin
Marinade:
2 cloves of garlic – chopped
1 tsp. salt
1 tablespoon ground cumin
1 tsp. ground oregano
1 tsp. curry powder
1 tablespoon paprika
1 tablespoons brown sugar
Zest of 1 lime
Juice of 1 lime
Combine all of the ingredients for the marinade in a bowl and form a paste.
Rub this paste all over the pork and place in a covered bowl in the refrigerator for at least one hour or as long as over night. The longer the pork marinades the better it will taste.
Slice the pork into ¼ inch thick slices, or however you prefer.
Heat a large frying pan with 2 tablespoons of olive oil and place the pork slices in the heated pan. Let the pork sauté about 3 -6 minutes, turning once. The pork will cook quickly, since it is sliced so thin, so be careful not to overcook.
Plate and serve.
Enjoy with Love,
Catherine

Love the photo on the article, Catherine. Evan grew up in Seaford and enjoyed lots of good Italian food in his neighborhood (that was fortunate, since as best I can tell, his mom may never have cooked. LOL!). blessings ~ tanna

Catherine, These chops from the center cut pork loin look great! Too many restaurants overcook pork so I rarely order it out...unless it's in BBQ form. It's all about the marinade, seasoning and timing... Take Care, Big Daddy Dave
