As the sun is setting just a bit earlier each day; one is thinking of the coming days of autumn. The summer is anticipated only to go by in the blink of an eye. To capture all that the season promises is felt in one sunset. To experience the beauty of such a sunset is only surpassed by the blessing of enjoying a simple; enjoyable meal with the faces that mean so much to you.
Chicken Quarters with Sweet Tomato Sauce
- Total Time: 1 hour
- Yield: 6 servings 1x
Ingredients
- 5-6 legs and thighs - with skin
- 1 Sweet Onion - diced
- 2 vine ripe tomatoes - diced
- 1 bell pepper - sliced
- 1/4 cup ketchup
- 3-4 tbs. teriyaki sauce
- 1 tsp. sugar
- 1 tsp. salt
- 1/2 tsp. red pepper flakes
- 1 tsp. turmeric
- 2 tsp. ground coriander
- 1/2 tsp. cloves
- 1 tsp. ground cumin
- 3 tbs. balsamic vinegar
- 2 tbs. vegetable oil
- Brown sugar for dusting the top of the chicken
Instructions
- Preheat Oven 350 degrees:
- Place the chicken in a baking pan.
- Combine the onions, tomatoes, ketchup, teriyaki sauce, sugar, salt, red pepper flakes, coriander, cloves, cumin, balsamic vinegar and vegetable oil in a bowl and toss.
- Pour the mixture over the chicken and place in the oven.
- Bake 50-55 minutes or until the juices run clear and a nice golden color is on the chicken.
- Prep Time: 10 minutes
- Cook Time: 50 minutes
