Ingredients

Units Scale
  • 5-6 legs and thighs - with skin
  • 1 Sweet Onion - diced
  • 2 vine ripe tomatoes - diced
  • 1 bell pepper - sliced
  • 1/4 cup ketchup
  • 3-4 tbs. teriyaki sauce
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. red pepper flakes
  • 1 tsp. turmeric
  • 2 tsp. ground coriander
  • 1/2 tsp. cloves
  • 1 tsp. ground cumin
  • 3 tbs. balsamic vinegar
  • 2 tbs. vegetable oil
  • Brown sugar for dusting the top of the chicken

Instructions

  1. Preheat Oven 350 degrees:
  2. Place the chicken in a baking pan.
  3. Combine the onions, tomatoes, ketchup, teriyaki sauce, sugar, salt, red pepper flakes, coriander, cloves, cumin, balsamic vinegar and vegetable oil in a bowl and toss.
  4. Pour the mixture over the chicken and place in the oven.
  5. Bake 50-55 minutes or until the juices run clear and a nice golden color is on the chicken.
  • Prep Time: 10 minutes
  • Cook Time: 50 minutes

    Guess what, lol...We picked out first tomato yesterday! Yipee! Now, I have another yummy dish to look forward to when more tomatoes decide to redden their little faces, lol...The Brown Sugar topping is the "icing" on the "cake" Thank you so much for sharing, Catherine...

    P.S. Loving the new look also. It took a couple of visits to get use to but I sure am liking it now:)
