My Dad loved coffee and of course I grew to love coffee too. It was one of the components of enjoying his company to share a cup of coffee. He would make the best coffee. Of course back then making coffee was an “art”. My dad had it down pat just how long the coffee should perk and the beautiful color it needed to turn and of course the aroma.
I do miss that in making coffee. It bonded a relationship to share a cup of coffee. I can still hear him say, “how about a spot of coffee?” Things were much simpler.
Well, I thought these cup cakes might go nice with a good cup of coffee. I know he would have enjoyed these and sharing a cup of coffee.

I have not seen either other recipe that uses chocolate chip cookies as a topping but the idea is really good and delicious!

There IS something special about sitting down at the kitchen table with a cup of coffee. I don't think it is quite the same as the trendy coffee shops people share coffee in these days. I grew up drinking coffee and still love it also. I actually remember drinking 'coffee' out of my sippy cup. I am pretty sure it was a splash of coffee and mostly milk 🙂
