A sweet & floral cake meant to be savored on a balmy summer day. With hints of rosemary and lemon, this cake is best when served warm with a cup of tea.
Seeing a bird soar and hearing its call; the smell of the salty air, the boat fumes and the rumble of the motor is a morning that the Lord blessed you with. One is scurrying to get ones fishing pole and the bait. The thermos is full of hot coffee and the sandwiches are simple; but yet this is a day that is rich and full of treasures. These treasurers are set in the recess of your mind; to be drawn and to fill you to the brim and lay the path to who you are.
PrintRosemary Remembrance Cake
- Total Time: 50 minutes
- Yield: 1 1x
Ingredients
For the Filling:
- 1 apple - peeled and cut
- 2 sprigs fresh rosemary
- 1 tsp. sugar
- Zest and juice of 1/2 lemon
- 1 tsp. butter
For the Cake:
- 1 stick butter - (original recipe calls for 2 sticks)
- 3/4 cup sugar
- 3 eggs
- 2 cups flour
- 1 tablespoon baking powder
Instructions
- Place all of the ingredients for the filling in a small saucepan and simmer on low for about 5 minutes.
- Let cool and remove the rosemary.
- Place cool apple in the food processor. Add the butter, sugar and eggs and process. Add the flour and baking powder and continue to process until smooth.
- Prepare a loaf pan and add the batter. Top with a fresh sprig of rosemary and sprinkle some sugar over the top.
- Preheat Oven 350 degrees F.
- Bake for 40 – 45 minutes or until toothpick test comes out clean.

Good Luck Catherine! I hope you win, your cake looks scrumptious. I was looking for a nectarine recipe last Sunday night and this looks like something that would have hit the spot. For some reason I just don't like the texture of cooked apples. But this cake sounds so unique and I love that addition of Rosemary.
