What a pleasure it was to review her new book, 175 Best Mini Pie Recipes. Each recipe is perfectly detailed and meticulously thought out. Itโs an easy guide for preparing party favorites like her Pork Empanadas with Salsa Verde or her Blueberry Lemon Pie Pops. Pie Pops are a favorite amongst the kids!
There is a beautiful array of pie dough recipes from whole wheat to vegan, tart shells and galettes, flaky pie crusts to shortcut puff pastry. Needless to say, there is something for everyone.
Today I bring you Julieโs Caramel Apple Hand Pies. Since fall is just around the corner, I thought it would be a nice recipe to feature.
These hand pies were soft and flaky, but itโs the caramel sauce that really makes this treat great. A hint of salty sweetness perfectly balances the subtle tartness from the apples.
Not only are they wonderful after dinner, but theyโre best warmed in the morning with a cup of coffee.

Caramel Apple Hand Pies
(pg. 100)
Filling:
2 tablespoons unsalted butter
3 Granny Smith apples, peeled and chopped
1 tablespoon freshly squeezed lemon juice
ยผ cup packed light brown sugar
2 tablespoon AP flour
ยผ teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 recipe All-Butter Pie Dough (recipe given below)
1 large egg, lightly beaten with 1 tablespoon water
1 recipe Bethโs Salted Caramel Sauce (recipe given below)
All-Butter Pie Dough:
3 cups AP flour
1 tablespoon granulated sugar
ยฝ teaspoon salt
9 oz. cold unsalted butter, cubed
ยพ cup ice water
2 teaspoon cider vinegar
Bethโs Salted Caramel Sauce:
1 cup granulated sugar
ยผ cup water
2 tablespoon corn syrup
4 tablespoons unsalted butter, cubed
2/3 cup heavy or whipping cream
1 teaspoon coarse or flaked sea salt
Directions
All-Butter Pie Dough:
In food processor fitted with the metal blade, pulse flour, sugar, and salt to combine.
Scatter butter over flour mixture and pulse several times, until butter is the size of peas. Transfer to bowl.
In a small bowl, stir together ice water and vinegar.
Add half of the water mixture to flour mixture, stirring with a fork to combine. Add more of the water mixture 1 tblsp. at a time, just until dough begins to hold together in moist clumps (you might not need all the mixture).
Shape dough into a ball, then transfer to a large piece of plastic wrap and flatten into a disk. Wrap tightly in plastic. Refrigerate for at least 1 hour.
Bethโs Salted Caramel Sauce:
In a medium saucepan over medium-high heat, combine sugar, water and corn syrup. Bring to a boil whisking constantly until sugar dissolves. Continue to boil, whisking occasionally, until deep amber in color, 5-6 minutes.
Remove pan from the heat and carefully stir in butter, cream and salt (mixture will bubble vigorously). Return to low heat and continue to whisk for 2-3 minutes, until caramel is smooth and thickened. Cool until warm. Reheat before serving!
Apple Hand Pie Filling:
In a medium skillet over medium heat, melt butter. Add apples and lemon juice and cook, stirring, until softened, 3-4 minutes. Drain and discard excess liquid. Transfer apples to a medium bowl. Set aside to cool completely.
In a small bowl, stir together brown sugar, flour, cinnamon and nutmeg. Add to apples and toss to blend.
On a lightly floured surface, roll out dough to slightly thicker than 1/16 inch. Using cutter, cut into rounds and place on prepared baking sheets, spacing apart. Reroll scraps as necessary.
Brush edges of rounds with egg wash. Place about 2 tablespoons apple mixture in center of each round and top with 1 heaping tsp. caramel sauce. Fold in half, enclosing filling. Pinch edges together to seal, and crimp with the tines of a fork.
Place pies, on baking sheets, in freezer for 30 minutes. Meanwhile, preheat oven to 350 degrees F.
Using tip of a sharp knife, cut 2 or 3 slits in top of each pie. Baked in preheated oven for 25 -30 minutes, switching positions of baking sheets halfway through, until pies are puffed and golden brown. Cool on sheets on wire racks for 5 minutes, then drizzle with remaining caramel sauce. Serve warm or at room temperature.
