We slice; we chop; we heat; we stir. We take two slices of bread. Top one with our creation and suddenly, we smile, and know that God is good. Always.
Ingredients:
4 bell peppers – sliced thin
4 –5 cloves of garlic – sliced
2 Jalapeño’s – sliced thin – with or without seeds
1 tsp. capers – plus tablespoon of caper juice
1 large red onion – sliced thin
¼ cup Italian parsley – chopped
¼ cup basil – chopped
¼ cup cilantro – chopped
3 stalks celery – chopped
2-3 tablespoons olive oil
1 tsp. salt
1 tsp. black pepper
½ tsp. red pepper flakes
1 tsp. dried oregano
1 tsp. garlic powder
Heat a large frying pan with the olive oil. Add the peppers, jalapeño’s, onions, garlic, parsley, cilantro, basil and celery. On a gentle heat toss until the peppers begin to soften.
Add the seasonings and toss.
Serve hot or cold.
Enjoy with Love,
Catherine
