Ingredients:
3 zucchini – peeled and grated
½ small red onion – chopped fine
¼ cup fresh Italian parsley – chopped
1 ½ cups corn meal
1 ½ cups flour
½ tsp. baking soda
½ tsp. baking powder
½ cup milk
2 eggs - beaten
½ tsp. salt
¼ tsp. black pepper
¼ tsp. paprika
¼ tsp. red pepper flakes
Vegetable oil for frying
In a large bowl combine the grated zucchini, chopped onion, flour, corn meal, baking soda, baking powder, milk, eggs, and seasonings.
Mix together and let sit for about 10 – 12 minutes.
Heat a large cast iron frying pan with about ½ inch of vegetable oil.
Using a teaspoon, carefully spoon the batter into the hot oil. Do not overcrowd the pan. When the fritter is golden on one side, carefully turn over and finish cooking on the other side.
Lay the fritters on a plate lined with paper towel to.
For the Dipping Sauce:
¼ cup balsamic vinegar
2 tablespoons honey
Pinch of salt
Pinch of red pepper flakes
Juice of ¼ lemon

I was a little confused when I first read the recipe title. In the UK 'Hush puppies' are a shoe...lol. These sound wonderful...how I wish you had put this recipe back in the summer when I had a glut on courgettes...never mind at least I have it for next year now!!

A very versatile veggie.Your recipe is scrumptious and I bought some zucchini the other day, so now I know what to make for dinner. A great way to add some spice and they are fun to eat as well.
