The old is now a memory. There are no regrets only lessons to guide one through the uncharted path ahead. There are moments to hold on to and those to let go of. There are tears that have been shed and joy that one was afraid to feel. There are songs yet to be played and dances yet to be danced. For the Lord has given a new year lain out like a canvas to blossom and for that I am grateful.

Ingredients:
16 oz. dried black beans
1 stalk celery – chopped
3 cloves garlic – chopped
¼ red onion – chopped
½ cup Italian parsley – chopped
1 cup of mixed pitted olives – chopped
2-3 red chili peppers – chopped
½ tsp. salt
½ tsp. black pepper
¼ tsp. red pepper flakes
8 oz. of your favorite macaroni or couscous
Dressing:
Juice of 1 lemon
3-4 tablespoons olive oil
Prepare beans as directed on package.
Combine all of the ingredients for the salad with the beans in a large bowl.
Add the seasonings to taste.
Combine the ingredients for the dressing; add to the salad and toss.
Prepare the macaroni or couscous as directed.
Add to the bean salad and toss.
Serve immediately or chilled.
