This bright and zesty dish is bursting with the fresh flavors of summer.

I sat out on the backporch this early morning beneath the misty rain. Yesterday seemed like a distant memory though I could still smell the faint aroma of the barbecue laced in the air with the fresh rain.
It was a wonderful July 4th spent with family. In the moment it seemed like a long day, but now in the blink of an eye it so quickly flashed by.
The summer holidays are over now, and so it is time to get back into the regular routine of things.
I wanted to start with this lighter meal especially after such a long holiday weekend.
To start, I prepped the salmon filet in a citrus based marinade with spicy jalapenos and fresh cilantro. To compliment the fish, I served it alongside seasoned rice.
It's a light meal but satisfying and a perfect way to get back into a balanced routine.

Ingredients
- 2 1/2 lbs. salmon filet
For the Marinade:
- Zest and juice of 2 limes
- 1 jalepeno - chopped (with or without seeds)
- 1 cup chopped fresh cilantro
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 4 tbs. olive oil
For the Rice:
- 1 1/2 cups rice
- 1/2 cup peas - fresh or frozen
- 1 mango, diced
- 1 clove of garlic - chopped
- 1/2 cup Italian parsley - chopped
- 1/2 red onion - diced
For the Dressing:
- 2 tbs. sesame oil
- 3 tbs. olive oil
- 3 tbs. rice wine vinegar
- 1/2 tsp. salt
- 1/2 tsp. black pepper
Instructions
For the Salmon and Marinade:
- Prepare the marinade in a bowl and place the salmon in the marinade. Cover the bowl and place in the refrigerator for at least one hour.
- Preheat Oven 350 degrees F.
- Place the salmon in a baking dish and place the oven.
- Bake for 20 to 25 minutes or until the salmon flakes easily with a fork.
For the Rice and Dressing:
- Prepare the rice as directed.
- Place the chopped parsley, onion, peas, mango and garlic in a bowl and toss with the rice.
- Drizzle the dressing over the rice and toss.
- Prep Time: 10 minutes
- Cook Time: 20 minutes
