Ingredients

Units Scale
  • 2 1/2 lbs. salmon filet

For the Marinade:

  • Zest and juice of 2 limes
  • 1 jalepeno - chopped (with or without seeds)
  • 1 cup chopped fresh cilantro
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 4 tbs. olive oil

For the Rice:

  • 1 1/2 cups rice
  • 1/2 cup peas - fresh or frozen
  • 1 mango, diced
  • 1 clove of garlic - chopped
  • 1/2 cup Italian parsley - chopped
  • 1/2 red onion - diced

For the Dressing:

  • 2 tbs. sesame oil
  • 3 tbs. olive oil
  • 3 tbs. rice wine vinegar
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper

Instructions

For the Salmon and Marinade:

  1. Prepare the marinade in a bowl and place the salmon in the marinade. Cover the bowl and place in the refrigerator for at least one hour.
  2. Preheat Oven 350 degrees F.
  3. Place the salmon in a baking dish and place the oven.
  4. Bake for 20 to 25 minutes or until the salmon flakes easily with a fork.

For the Rice and Dressing:

  1. Prepare the rice as directed.
  2. Place the chopped parsley, onion, peas, mango and garlic in a bowl and toss with the rice.
  3. Drizzle the dressing over the rice and toss.
