Delightful in their simplicity, yet undeniably rich in flavor, these Scottish Shortbread Cookies combine golden, buttery goodness with luxurious sweetness. Tender yet crisp, and richly satisfying, these delicate morsels have a charm that’s nothing short of universal, making them a staple on dessert tables and tea-time spreads.
Crafting these classic shortbread cookies requires just a handful of simple ingredients – a mere three, actually. Combining flour, sugar, and chilled butter with the baking process we’ve outlined below, we unlock the secret to their indulgent melt-in-your-mouth texture. Grating the butter is key, as this technique ensures the butter is evenly distributed throughout the dough, resulting in a uniform and tender crumb. By scoring and pricking of the dough we help ensure the perfect texture—golden on the outside and heavenly soft within. Just as a good shortbread should be.
However, versatility is perhaps these cookies most defining treat. They are just decadent enough to serve as a sweet bite after dinner with your favorite tea, or as an indulgent afternoon snack. However, delicious cookies deserve an equally delicious tea.
And that’s where our good friends over at Mark T Wendell come in. Whether after dinner, for breakfast, or as a midday retreat, no tea time is complete with the perfect tea. The good folks over at Mark T Wendell bring exceptional quality and masterful craftsmanship to their teas, ensuring that you will be enjoying the most delicious cup of tea alongside these Scottish Shortbreads. With their commitment to sourcing the finest teas and creating blends that delight the senses, Mark T Wendell has earned a reputation for excellence. Their Scottish Breakfast Tea is a blend of Indian, Sri Lankan, and Chinese teas, which combine to produce a bright and lively liquor-color when brewed. This tea is also a fair bit stronger and with more character than their other breakfast blends, making it an invigorating cup of tea to start your day with.
Now, without further delay, let’s make some shortbreads. Read on for pairing suggestions, an ingredient checklist, baking tips, and a printable recipe card.
Ingredient Checklist – Everything You’ll Need
This really couldn’t be simpler.
- ½ stick butter, chilled and grated:
- Notes: Chilling the butter is crucial for achieving the desired texture.
- Tips: Use a box grater to easily grate the chilled butter.
- 2 cups all-purpose flour:
- Notes: Opt for high-quality flour for the best results.
- Tips: Sift the flour before incorporating it into the dough for a smoother consistency.
- ½ cup sugar:
- Notes: Plain white sugar is all you’re looking for here.
- Substitutions: Brown sugar can be used for a slightly different flavor profile.
And that’s it. Just three ingredients.
Prep Tips – Making the Perfect Shortbread
Here are my top eleven tips for preparing the perfect shortbread cookies every time.
- Chill the Butter:
- Ensure the butter is well-chilled before grating. This helps achieve the desired texture in the shortbread.
- Grate the Butter Efficiently:
- Use a box grater to easily and efficiently grate the chilled butter. This method ensures even distribution in the dough. Even distribution of the butter is where the shortbreads’ signature texture comes from.
- Sift the Flour:
- Sift the all-purpose flour before incorporating it into the dough. This helps remove any lumps and ensures a smoother consistency in the cookies.
- Preheat the Oven:
- Preheat the oven to 350 degrees F and verify the temperature with an oven thermometer for accuracy. A properly preheated oven ensures even baking.
- Use Parchment Paper:
- Line the 8x8 square baking dish with parchment paper, leaving some overhang. This makes it easier to lift the cookies out of the dish after baking.
- Avoid Overmixing:
- When blending the flour, sugar, and butter, pulse the ingredients until just combined. Avoid overmixing, as this can affect the texture of the shortbread.
- Gentle Patting of Dough:
- Gently pat the cookie dough into the prepared baking dish for an even layer. A spatula or the back of a spoon can be used for this step.
- Efficient Scoring:
- Use a dough cutter to both smooth the dough and gently score it into the desired size bars. Scoring helps with even slicing after baking.
- Monitor Baking Time:
- Keep a close eye on the cookies while baking, and follow the recommended 35-minute baking time or until they turn golden. Adjust the time based on your oven's characteristics.
- Cooling Process:
- Allow the cookies to cool slightly in the baking dish before transferring them to a wire rack. Cooling in the dish helps set the cookies.
- Neat Slicing:
- Following the scored lines, gently slice the shortbreads with a sharp knife. Wiping the knife between cuts helps achieve cleaner slices.
Yes, it is just that simple.
Pairing Suggestions
- Tea Pairing:
- Classic shortbread cookies are a perfect match with various teas. Consider serving them with such teas as Mark T. Wendell’s Scottish Breakfast Tea, or any of the other delicious teas found over on their website.
- Dessert Platter Addition:
- Include Scottish Shortbread Cookies on a dessert platter alongside other sweet treats like chocolate truffles, fruit tarts, or petits fours for a diverse and elegant spread.
- Fruit and Cheese Pairing:
- Serve shortbread cookies with a selection of fresh fruit slices, such as strawberries or raspberries. Additionally, consider pairing them with a mild cheese like Brie or Gouda.
- Ice Cream Sandwiches:
- Create ice cream sandwiches by sandwiching a scoop of vanilla or butter pecan ice cream between two shortbread cookies. The contrast in textures and temperatures is delightful.
- Lemon Curd Accompaniment:
- Serve Scottish Shortbread Cookies with a side of tangy lemon curd. The combination of sweet and citrusy flavors would be delightfully refreshing.
- Whipped Cream and Berries:
- Top shortbread cookies with a dollop of freshly whipped cream and a few berries, such as blueberries or blackberries, for a simple yet elegant presentation.
- Dessert Sundae Component:
- Break shortbread cookies into pieces and use them as a crunchy layer in a dessert sundae with layers of ice cream, chocolate sauce, and whipped cream.
- Almond or Hazelnut Spread Dip:
- Serve shortbread cookies with a side of almond or hazelnut spread for dipping. The nutty flavors complement the buttery richness of the cookies.
