Pecan Snowball Cookies
- Total Time: 20 minutes
- Yield: 1 dozen cookies 1x
Ingredients
- 1/2 cup unsalted butter, softened
- 2 teaspoons vanilla extract
- 1/2 cup sugar
- 1 1/2 cup AP flour
- 3/4 cup chopped pecans
- 1 cup confectioner's sugar, for rolling
Instructions
- Preheat oven to 350 degrees F. and line a baking tray with parchment paper. Set aside.
- In the bowl of a stand-mixer with paddle attachment, beat butter, vanilla, and sugar until smooth and creamy.
- Add flour and pecans. Mix until everything is well combined.
- Scoop about a rounded tablespoon of cookie dough and roll between your hands to form perfect shaped balls. Place on the prepared baking sheet and bake for about 10-12 minutes or until lightly golden.
- Remove and let cool slightly before rolling in confectioner's sugar.
- Serve and enjoy!
