Pecan Snowball Cookies

Ingredients

  • 1/2 cup unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 1/2 cup sugar
  • 1 1/2 cup AP flour
  • 3/4 cup chopped pecans
  • 1 cup confectioner’s sugar, for rolling

Instructions

  • Preheat oven to 350 degrees F. and line a baking tray with parchment paper.  Set aside.
  • In the bowl of a stand-mixer with paddle attachment, beat butter, vanilla, and sugar until smooth and creamy.
  • Add flour and pecans.  Mix until everything is well combined.
  • Scoop about a rounded tablespoon of cookie dough and roll between your hands to form perfect shaped balls.  Place on the prepared baking sheet and bake for about 10-12 minutes or until lightly golden.
  • Remove and let cool slightly before rolling in confectioner’s sugar.
  • Serve and enjoy!
