    Ingredients

    Units Scale
    • 1 cup of fresh peaches (about 2 medium peaches - skin removed), diced plus 1 tablespoon of flour
    • 2 cups of AP flour
    • 1 1/2 tsps. baking powder
    • 1/2 tsp baking soda
    • Zest of 1/2 lemon
    • 1/4 tsp. salt
    • 1/4 cup milk
    • 2 tbs. melted butter
    • 1 cup sour cream
    • 1/2 cup of sugar
    • 1 egg
    • 3 tablespoons brown sugar, for topping

    Instructions

    Preheat Oven 325 degrees F. and line a cupcake tin.  Set aside.
    In a large bowl combine the flour, baking powder, baking soda, lemon zest and salt.
    Heat the milk together with the butter, just enough so the butter melts.
    In a smaller bowl whisk together the sour cream, sugar, melted butter and milk.  Add the egg and whisk until combined.
    In a small bowl place the peaches and 1 tablespoon of flour and toss.
    Add the sour cream mixture to the flour mixture and toss gently until combined.  Gently fold in the peaches.
    Spoon the batter into the lined cupcake tin and top with the brown sugar.
    Bake 25-30 minutes or until the toothpick test comes out clean.

      I made these, and despite my best efforts to not overmix them, they still ended up a little dense. If I make them again I would fold the peaches in at the same time I mix the wet and dry ingredients so as to reduce the amount of mixing required. Also, I added 2 teaspoons of a chai spice mix which added some nice flavour, I think they might have been too bland without it.

      I find these muffins very plain I think maybe some cinnamon would be the key to making it tastier.

      Wish you had a photo of the batter. Mine was so shaggy and dry (almost like bread dough before kneading) that I couldn’t fold in the peaches. Had to kind of jam them on the outside of the dough and pull off chunks to plop into the muffin liners. It was the strangest batter I’ve ever made. Subbed yogurt for sour cream and topped with brown sugar oat crumble. They turned out tasty but don’t look like yours. Scanned the comments for assistance but didn’t find a single review of someone who’d actually made this recipe.

        Hi KT! Sounds to me like you didn't quite have enough liquid in the batter. Yogurt isn't as dense as sour cream so that is probably why your batter was different. It should be a thicker batter unlike cupcake batter if that is what you were expecting. I'm still glad they turned out and you enjoyed. Thanks for stopping by!

      I wanted to try substituting the cake mix for the dry ingredients, as you had suggested. Do you use the whole box of cake mix or measure out 1 cup? I measured and my muffins seem a bit mushy, but tasty. What do you suggest?
