How are your 2018 resolutions going? Need help staying on track? Try out easy and delicious Apple Granola Muffin!
Through experience, I’ve learned that one of the easiest ways to sabotage a whole day’s worth of Resolution Worthy Eating before it’s even happened is…well, a ‘healthy’ breakfast, and by that I mean a morning meal that leaves you with that intolerable ‘healthful eating’ feeling. You know what I’m talking about, that momentary psychological high of “Wow I did something great for myself,” that quickly fades away into a physical and psychological “Oh my god I’m going to die of starvation today, and it isn’t even noon yet.”
That’s more or less been the theme of my last post, where I focused on keeping my Resolutions alive, but without ‘sacrificing’ as such Resolutions usually entail. Today, we carry that theme forward with my “It Is A Good Morning Muffins.”
As the name implies, these are meant to keep the morning as the part of the day to charge up, set a good mindset, and head off into the daily unknown as prepared as possible. Now, while I’ve been known to enjoy a yogurt and fruit as a means of ‘healthful’ eating in the morning, such cold fare really doesn’t cut it when the river is frozen over and there’s snow looming in the forecast. On the contrary, for me at least, that’s basically an exercise in masochism.
To avoid such unpleasantness is precisely where today’s recipe comes in, as mentioned before, “It Is a Good Morning Muffins” or Apple Granola Muffins.
To start things off…no, we’re not using any cast iron pans this time around. Instead, we start off by combining Bob’s Red Mill Quick Cooking Rolled Oats with eggs, vanilla, sugar, and canola oil, and we gently mix this together.
In a second bowl, combine flour, baking powder, salt, and cinnamon, and then stir the dry ingredients with the oatmeal mixture.
Now add in the chopped apples and nuts and stir, spoon this mixture into muffin tins lined with cupcake wrappers, and top each muffin with Bob’s Red Mill Gluten Free Honey Oat Granola, and then bake for about 20 - 25 minutes, or until they pass the toothpick test.

Ingredients
- 1 1/4 cup Bob’s Redmill Quick Cooking Rolled Oats
- 2/3 cup whole milk
- 2 eggs
- 3/4 cup sugar
- 1/4 cup Canola oil
- 1 cup Bob’s Redmill Flour
- 2 1/2 tsps. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1 tbs. vanilla
- 1 cup chopped apples
- 3/4 cup chopped walnuts
- Bob’s Red Mill Gluten Free Honey Oat Granola
Instructions
- Preheat Oven 375 degrees F.
- Combine Bob’s Redmill Quick Cooking Rolled Oats, eggs, sugar, milk, and Canola oil in a bowl and gently mix together.
- In a second bowl combine flour, baking powder, salt and cinnamon and stir together. Add the bowl with the flour mixture to the wet ingredients and gently stir together.
- Stir in the chopped apples and the chopped nuts.
- Top each muffin with the Bob’s Red Mill Gluten Free Honey Oat Granola.
- Bake 20 – 25 minutes or until the toothpick test comes out clean.
- Prep Time: 10 minutes
- Cook Time: 20 minutes

Made these today. Very very yummy. I added about 2 cups of chopped apple, as I wanted both my apples used and I had no nuts. I half filled my muffin tins and sprinkled on the granola then filled the tins with remaining batter. Only added half cup of brown sugar. The muffins were light, sweet, moist and full of apples.

Too sweet. Recommend using 1/3 cup of sugar instead of 3/4 cups of sugar. Also, milk is listed in ingredient list, but not mention in the directions. I found the milk to be either unnecessary or only 1/4 cup milk required. Will try this recipe again with the modifications.
