It is a familiar sensation, instantly recognizable as one of life's unavoidable quandaries. There are tasks that requiring finishing, responsibilities that must be met, and no matter how many we complete, more present themselves. Often times it seems as though there just aren't enough hours in these terminally short days of ours, even as the daylight itself grows longer with the onset of summer.

Yet, there is simply no time to slow down, not even as the increasingly balmy days beckon us to do so. In fact, we need to keep going all the more, to increase the amount of activity that we indulge in order to keep pace not just with our responsibilities, but with the sun-baked activities that summer itself blissfully demands of us. As a result, morning (afternoon and evening) coffee simply will not cut it anymore. Instead, now we need to stay hydrated as we move from work to beach barbeques to media events to swimming, and then back again. Whether it's in between writing content and gliding off in the kayak, or attending a wine tasting and then getting in that sunset run, downtime is never an option, and neither is failing to stay hydrated and energized.

It is for exactly that reason that one of the things I make sure to keep on hand during the summer season is Emergen-C and Dasani water, particularly at Walgreens, where during the month of June if I buy one Emergen-C 30ct, I get one free liter of Dasani.

However, far be it from me to be content with merely mixing and drinking the two, I require something more along the lines of a treat. Instead, I like something that I can enjoy while working at my desk, but that will also fit seamlessly into an afternoon or late evening of summer fun, whether at the end of a lunch party, or during an outdoor workout.

To achieve this, I rely on something that says 'summer' better than almost anything else - popsicles.

To create my popsicles of choice, I combine coconut milk, sliced strawberries, peaches, and lemon, along with a packet of Emergen-C, to create a versatile medley of seasonal flavors, balancing sweetness and freshness with no added sugar.

An energizing blend of seven B vitamins, and more vitamin C than ten oranges, these popsicles will not only help keep me energized, but will support my immune system throughout the day, while also restoring key electrolytes after a heated summer workout.

Ingredients

Units Scale
  • 1 cup coconut milk
  • 1/2 cup strawberries - sliced
  • 2 peaches - sliced
  • 1/4 lemon - sliced - without skin
  • 1 packet of orange Emergen-C C

Instructions

  1. Combine all of the above in a food processor and process until creamy.
  2. Fill freezer pops and place in freezer until set.

*Prep time does NOT include inactive prep time.

  • Prep Time: 8 minutes
