Living the Gourmet: Coconut Peanut Butter Cookies

For this month's Secret Recipe Club (SRC) I was assigned A Little Bit of Everything.

Julie, who authors A Little Bit of Everything, is my kind of girl- we both share a passion for baking and love for all things sweet!

There were so many recipes, I didn't know which one to try first, but then I stumbled across these Five Ingredient PB Cookie and could not resist!

I loved the idea of coconut in the batter. They are SO good. I made few minor changes, basically just adjusting the sugar content and adding oats because I cannot resist oats in cookies.

Coconut Oatmeal Peanut Butter Cookies

Ingredients

Units Scale
  • 1 cup reduced-fat creamy peanut butter
  • 1/4 cup sugar
  • 1 egg
  • 1 teaspoon baking soda
  • 1/4 cup coconut flakes
  • 1/4 cup rolled oats

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl combine all ingredients. Mix until a soft, thick batter forms.
  3. Scoop about 12 cookies on a baking sheet and bake for about 10 minutes or until cookies are golden around the edges.
  4. Transfer to a plate and let cool to set. Enjoy!

  • Cook Time: 10 minutes

    Worst cookies ever. Way too crumbly, and I even did what another comment suggested and added oil. Perhaps it needed another egg? I thought it was kind of weird there was no flour in these. I'm going to try freezing them and seeing if they won't just fall apart then.

      Dear Elizabeth, so sorry you had this issue! When I made these flourless PB cookies they came out delicious but a little crumbly because they don't have the flour's gluten. That being said, they are a little more rich thought because of this. I would say they fell apart due to a couple of different reasons: you might have overbaked them, you used an oily peanut butter, or you did not leave them to cool long enough before transferring them. Timing is key here. Next time, I would allow them to rest and be sure you're not using a high oil PB. I hope they come back better next time. Enjoy!
