Stuffed Chicken Drumsticks

Living the Gourmet: Stuffed Chicken Legs
There really is nothing better than enjoying a nice meal with those you care most about.

Once again, I was not quite sure what to prepare for dinner until I saw fresh cilantro in the fridge. I thought about it, and concluded that the cilantro would make a refreshing stuffing for the drumsticks I picked up at the store that day. It was a delicious meal that my kids and I thoroughly enjoyed.

For those who are not big fans of cilantro, feel free to substitute it with Italian parsley.

Ingredients

  • 8 chicken legs – with skin
  • For the Stuffing:
  • Juice of 1 lime
  • 1 cup cilantro or Italian parsley
  • 2 garlic cloves
  • 1 tsp. sugar
  • ½ tsp. cumin
  • ½ tsp. turmeric
  • ½ tsp. black pepper
  • ½ tsp. salt
  • ½ tsp. coriander
  • 3 tbs. olive oil

Instructions

  1. Place all of the above in a food processor and give a few good chops.
  2. Preheat Oven 375 degrees.
  3. Gently pull the skin from the leg back and stuff the mixture into under the skin.
  4. Place the legs in a baking dish and bake for 45 – 50 minutes or until a beautiful golden color appears and the juices run clear.

    That's so funny, Catherine. I stuffed drumsticks over the weeknd. I made Marion's with cilantro and mine with rosemary. Marion says Rosemary gives you high blood pressure so she won't go near it, lol... I must say, mine sure didn't look as inviting as yours:) Thanks for sharing, Catherine...

    Dear Catherine, I love this idea. I never would have thought to stuff chicken legs, they are so small, but you placed stuffing under the skin, very smart idea. They look fabulous and I bet there were none left. It probably would have been delicious even cold. Thanks for sharing this yummy dish with us.     I make stuffed chicken drumsticks, removing the meat around the bone.Then,I combine all ingredients with chopped chicken and bake at 350, till crisp and brown.i also add to the stuffing pistachios. Looks good and taste great.Yes,it’s takes a little time,but your guests will love it.
