    This plate of food tells me who I am. It holds the memory of so long ago when the kitchen so small was filled with hearts so big. I miss them all though they live with me so silently.

    Ingredients

    Units Scale
    • 14.4 oz. of frozen baby peas
    • 3 - 4 large zucchini - quartered and sliced
    • 3 vine ripe tomatoes - diced
    • 1/4 cup fresh basil - chopped
    • 1/2 tsp. salt
    • 1/2 tsp. black pepper
    • 1/4 tsp. dried oregano
    • 1/4 tsp. red pepper flakes
    • 1/2 red onion - sliced
    • 2 cloves garlic - chopped
    • 3 - 4 tbs. olive oil - plus more for drizzling
    • Fresh grated Parmesan cheese or Romano - plus shavings of cheese
    • 1 lb. of your favorite spaghetti

    Instructions

    1. Heat a large frying pan with 3 tbs. of olive oil; add the zucchini to sauté and soften.
    2. Add the tomatoes and onions and continue to sauté on a low heat.
    3. When the tomatoes soften; add the frozen peas, along with the seasonings and continue to sauté on a low heat.
    4. Prepare the spaghetti as directed.
    5. Drain the spaghetti and plate; drizzle with olive oil and a dash of red pepper flakes, black pepper and oregano. Shave some of the grating cheese on the spaghetti and top with the zucchini sauce and toss. Grate more cheese over the top and serve.

      Hi Catherine:)
      I could almost kick myself for not growing Zucchini this year. What was I thinking, lol...I do, however, have a very sweet neighbor who "swapped" me a zucchini for an eggplant. I'm having a bumper crop of eggplant this year:)

      I'm delighted to see the peas in this pasta dish too, Catherine. My grandmother often included peas in her pasta meals. With the exception of Pasta e Piselli, it never made sense to me when I was younger even though I liked peas. Thanks for stirring up the memories, Catherine...

      Fabulous dish! I can have spaghetti every day. I could live just on spaghetti. I love fresh veg in pasta dishes and this is really tasty. Zucchine are still available at this time of year so let's make the most of them!
