Spaghetti with Fresh Zucchini

This plate of food tells me who I am. It holds the memory of so long ago when the kitchen so small was filled with hearts so big. I miss them all, though they live with me so silently.

Spaghetti with Fresh Zucchini

Ingredients

Units Scale
  • 14.4 oz. of frozen baby peas
  • 3-4 large zucchini, quartered and sliced
  • 3 vine-ripe tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. dried oregano
  • 1/4 tsp. red pepper flakes
  • 1/2 red onion, sliced
  • 2 cloves garlic, chopped
  • 3-4 tbs. olive oil, plus more for drizzling
  • Fresh grated Parmesan cheese or Romano, plus shavings of cheese
  • 1 lb. of your favorite spaghetti

Instructions

  1. Heat a large frying pan with 3 tbs. of olive oil; add the zucchini to sauté and soften.
  2. Add the tomatoes and onions and continue to sauté on a low heat.
  3. When the tomatoes soften, add the frozen peas, along with the seasonings, and continue to sauté on a low heat.
  4. Prepare the spaghetti as directed.
  5. Drain the spaghetti and plate; drizzle with olive oil and a dash of red pepper flakes, black pepper, and oregano. Shave some of the grating cheese on the spaghetti and top with the zucchini sauce and toss. Grate more cheese over the top and serve.

    Catherine, We both love zucchini and pasta so this is a winner entree! I prefer penne pasta vs. spaghetti as I'm less likely to end up 'wearing it ' and ruining another shirt! Take Care, Big Daddy Dave

    I have been eating sautéed Italian zucchini all summer and just tonight had it over rigatoni....so good! Your recipe is just different enough to try it again. Hopefully there is still some zucchini out there at the stand! Pinned!

    Dear Catherine, what a wonderful meal to enjoy with your family. Love this combo, it reminds me of home, real comfort food. Peas, zucchini, and spaghetti and we can't forget the cheese.
