Cilantro Dip

Cilantro Dip
The beautiful color, aroma and freshness of this dip makes the waning season of summer come to life once more.

There really is nothing more relaxing than to sit with family and friends and enjoy and sunset. These times are not as frequent as one would wish for; though they are precious and saved to renew and inspire the spirit as the long winter begins to peek from just around the corner.

Ingredients

  • 1 cup of packed fresh cilantro
  • 10 oz. can of cannellini beans – drained
  • ½ whole lemon
  • ½ tsp. red pepper flakes
  • 3 tbs. olive oil
  • 3 sun dried tomatoes
  • 2 cloves of garlic

Instructions

  1. Combine all of the above ingredients in a food processor and give a few good chops until a desired consistency is reached.
  2. Serve with cheese, delicious fresh baked bread, fresh fruit, crackers or chips and a delicious wine.

    Dear Catherine, This recipe looks very delicious. Just the perfect dip for a nice evening looking at the sunset.
