There are times when things seem so routine….these are the times when the imagination must be put to work. The spirit needs to recharge and gear up for a new day, new week, new month and a new beginning. How is this done? I think that we stumble into how things are done and know that what is put before us is no mistake. We simply take a deep breath, pray and then begin.
However, things are always better and easier to challenge when we do take that deep breath and enjoy a nice meal with the faces we so dearly love.

BBQ Chicken Kabobs

Ingredients

Units Scale
  • 8 boneless chicken thighs - cut into chunks
  • 3 bell peppers - any color - sliced into chunks
  • 1 1/2 large onions - sliced into large pieces
  • Kabob sticks - soaked in water for at least 10 minutes before using

For the Marinade:

  • 2 cloves of garlic - chopped
  • Juice of 2 limes
  • 1 tsp. turmeric
  • 1 tsp. ground coriander
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. paprika
  • 2 tsp. chopped fresh basil
  • 3 tbs. vegetable oil

Tzatziki Sauce:

  • 10 oz. sour cream
  • 1 small cucumber
  • 1- 2 cloves of garlic
  • Juice of 1/2 lemon
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 3 - 4 tbs. fresh dill

Instructions

For Marinade and Kabobs:

  1. Combine all of the above for the marinade and place in a container with the chicken. Let this marinade for 1 hour or up to overnight.
  2. Alternate the chicken with the peppers and onions on the kabob sticks.
  3. Barbecue on the grill until the juices of the chicken run clear.

Tzatziki Sauce:

  1. Combine all of the above in a blender and give a few good chops.
  2. Serve as a dipping sauce with the chicken kabobs.
  • Prep Time: 15 minutes
  • Cook Time: 15 minutes

    Catherine, Not really into kabobs...as I can't stand the smell or taste of bell peppers. I do like the marinade though for chicken...baked or grilled. Both my wife and I love Tzatziki Sauce but we've never tried making it ourselves. Thanks for the idea and the recipe! Take Care, Big Daddy Dave
