    These Italian Coffee Cookies are made with just 5 simple ingredients and create the softest cookie, perfect for coffee or tea!

    • Inactive Prep Time: 20 minutes
    • Cook Time: 12 minutes
    • Total Time: 37 minutes
    • Yield: 1 dozen cookies 1x
    • Category: Dessert

    Ingredients

    Units Scale
    • 1/4 cup canola oil or melted butter
    • 3 eggs
    • 1 cup sugar
    • 1 teaspoon vanilla
    • 2 cups self-rising flour

    Instructions

    1. In the bowl of your stand-mixer, beat oil, eggs, sugar, and vanilla until smooth.
    2. Add flour 1/2 cup at a time until a nice smooth dough forms.
    3. If the dough is still sticky, pat with extra flour and form into a 10-inch log.  Wrap in parchment paper and then a towel or plastic wrap.
    4. Freeze for approximately 15-20 minutes.
    5. Preheat oven to 350 degrees F. and line a cookie sheet with parchment paper. Set aside.
    6. Cut the dough into 1/2-inch thick slices.
    7. Bake for 12-15 minutes or until cookies are golden.
    8. Transfer to a wire rack and let cool.
    9. Serve alongside a cup of coffee and enjoy!
