    Creamy Spinach Pizza

    I don't think there is anything I enjoy more than making my own pizzas.  It may even be one of my favorite foods.

    This creamy spinach pizza was a gamble.  Mom had the idea originally.  However, when her plans to make this pizza were diverted, I decided to try it myself and hopefully live up to her expectations.

    By the look on her face when she bit into the first slice, I'd say I exceeded those expectations.  Mama taught me well 😉

    We had some cottage cheese on hand that needed to be used and that is how this heavenly pizza came to be.  So, if you don't have ricotta cheese don't sweat it because white pizza can be easily accomplished with cottage cheese.

    Follow the link for the simple red sauce pizza.

    Ingredients:

    1 store bought pizza dough

    1 cup cottage cheese
    1/4 cup whole milk
    1/4 onion diced
    1/4 teaspoon cornstarch
    1/2 cup sauteed spinach
    1/2 cup shredded Monterery Jack
    1/4 cup grated Parmesan cheese
    2 tablespoons olive oil

    Preheat oven to 400 degrees F.

    Saute spinach in a pan with a knob of butter until cooked through.  Set aside and let cool.

    Roll out the pizza dough and place on a pizza pan sprinkled with cornmeal.  Blind bake the dough for about 7-8 minutes.

    In your food processor, process cottage cheese, milk, onion and cornstarch until combined.  The consistency should resemble that of ricotta- smooth with a few curdles.

    Fold in sauteed spinach.

    Spread the spinach and cottage cheese sauce evenly over the entire pie.  Sprinkle generously with the shredded cheese and Parmesan.  Drizzle two tablespoons of oil over the pie and bake for about 15 minutes or until golden.

    Serve & Enjoy!
