    Creamy Spinach Pizza

Written by Living the Gourmet, a trusted food and lifestyle site since 2008.

I don't think there is anything I enjoy more than making my own pizzas.  It may even be one of my favorite foods.

This creamy spinach pizza was a gamble.  Mom had the idea originally.  However, when her plans to make this pizza were diverted, I decided to try it myself and hopefully live up to her expectations.

By the look on her face when she bit into the first slice, I'd say I exceeded those expectations.  Mama taught me well 😉

We had some cottage cheese on hand that needed to be used and that is how this heavenly pizza came to be.  So, if you don't have ricotta cheese don't sweat it because white pizza can be easily accomplished with cottage cheese.

Follow the link for the simple red sauce pizza.

    Ingredients:

    1 store bought pizza dough

    1 cup cottage cheese
    1/4 cup whole milk
    1/4 onion diced
    1/4 teaspoon cornstarch
    1/2 cup sauteed spinach
    1/2 cup shredded Monterery Jack
    1/4 cup grated Parmesan cheese
    2 tablespoons olive oil

Preheat oven to 400 degrees F.

Saute spinach in a pan with a knob of butter until cooked through.  Set aside and let cool.

Roll out the pizza dough and place on a pizza pan sprinkled with cornmeal.  Blind bake the dough for about 7-8 minutes.

In your food processor, process cottage cheese, milk, onion and cornstarch until combined.  The consistency should resemble that of ricotta- smooth with a few curdles.

    Fold in sauteed spinach.

Spread the spinach and cottage cheese sauce evenly over the entire pie.  Sprinkle generously with the shredded cheese and Parmesan.  Drizzle two tablespoons of oil over the pie and bake for about 15 minutes or until golden.

    Serve & Enjoy!

    Toodles,
    Tammy<3

Hi Tammy, Wow I am getting hungry just looking at this delicious pizza. I agree with you, making pizza is a very comforting food to re-create. I think it is because you can make it anyway you want. Once you have the dough, the world is open up to you as what you want to put on it. Now the spinach is one of my favorites, plus white pizza. Fantastic recipe and I love the fact that you used store bought pizza dough. When you are hungry, you don't have time to wait for the dough to rise. Thanks for sharing, and you are correct mama taught you right! Blessings for a good Monday...Dottie 🙂

Tammy, We love pizza although I must admit that while we've had 'white' pizzas, we've never had a spinach pizza. Looks good too! We've begun making quick if not genuine pizzas at home by just putting cheese, spices and chicken, bacon, sausage or pepperoni on lavosh and then microwaving them for about 1 minute. The lavosh holds up and it's a tasty snack... Take Care, Big Daddy Dave

      Hi Tammy!
Would you believe I have never made my own Pizza? Not even with store bought dough. Shame on me, lol...Looks like Mamma's touch has fallen on wonderful hands. Your Pizza looks delicious and just happens to be one of my favorite kinds since, dare I say, I'm not much of a Pizza lover:) I've often wondered about using cottage cheese. Looks like it works just fine. Thanks for sharing, Tammy. Hi to Mom! I hope she is enjoying this sunshine and the longer days:)
