Cereal Agave Cookies

If you are looking for a treat that is guilt-free, tasty, and appealing to the kiddos look no further.These cereal agave cookies are sweet and chewy with bits of crunch.  For a cookie, they are pretty healthy too, loaded with oats and naturally sweetened with agave nectar.

Cereal Agave Cookies


  • Prep Time: 5 minutes
  • Cook Time: 8 minutes
  • Total Time: 13 minutes
  • Yield: 1 dozen cookies 1x

Ingredients

Scale
  • 2 cups cereal ground, (Honey Bunches or Cheerios are best)
  • 1/2 cup rolled oats
  • 1/4 cup agave nectar
  • 2 tablespoons canola oil
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line cookie sheet with parchment paper.
  3. In a medium bowl, combine ground cereal and oats. Toss.
  4. Add agave, oil, vanilla and egg. Mix until a thick sticky batter forms.
  5. Fold in chocolate chips.
  6. Using 1 round tablespoon, scoop cookie dough onto baking sheets. You should get about 1 dozen or so.
  7. Bake for approximately 8 minutes until golden around the edges. Transfer to a cooling rack immediately.

    Since they have a lot of cereal and oats in them, I wouldn't feel guilty eating them for breakfast...and who wouldn't want cookies for breakfast!
