    Macaroni with Peas

    Peeking through are the signs of what is to come

    The song of spring with its breezes humming
    The tears of the rain that fall; calling, calling to us all
    Yet no one hears, no one hears
    Through these tears welled for so many years
    Come the hope and the faith that calmed the fear
    For today is here and it is brighter and clear

    Ingredients:
    4 cloves of garlic - chopped
    2 tablespoons - butter
    2 tablespoons olive oil
    ½ cup of Italian parsley - chopped
    1 cup of frozen peas
    ½ cup of chicken broth
    ¼ cup or red wine
    ½ tsp. Salt
    ½ tsp. red pepper flakes
    Grated Parmesan or Romano cheese
    1 lb. of your favorite macaroni
    Heat a large frying pan with the olive oil, butter, garlic and parsley.  Sauté until the garlic is fragrant.   Add the seasonings and the wine, peas and chicken broth and simmer on low for a minute or two.
    Prepare the macaroni as directed and lift into the frying pan.
    Serve with an extra drizzle of olive oil, red pepper flakes and grated cheese.

      I think that is a great alternative then spaghetti sauce - adds some green veggies too.

      Did you ever hear of a 'dish' - peas and eggs and onions? My mother made it - I could probably make it from vague memory - except my husband hates peas and I like them. Of course he hates broccoli too - another fav veg of mine -
