The simplicity of yesterday sustains. The warmth, the heart and sincerity sustains for today; without experiencing one would not know what one is missing. Yet, that is what makes one long; for without knowing one does not miss only wonder.

Ingredients:
29 oz. can of cannellini beans – drained
2 heads of escarole – washed and ripped
4-5 cloves of garlic – chopped
3 – 4 marinated chili peppers - chopped
Juice of ½ lemon
½ tsp. salt
½ tsp. black pepper
½ tsp. red pepper flakes
½ cup of chicken broth
2-3 tablespoons of olive oil
1 lb. of spaghetti – prepared as directed
Grated Romano or Parmesan cheese
Heat a large cast iron frying pan with olive oil; add the garlic and chili peppers to sauté on low.
When the garlic is fragrant add the escarole and cover slightly. The escarole will cook down.
Add the chicken broth, lemon juice, beans and seasonings and toss. Simmer on low heat while preparing the spaghetti.
Lift the spaghetti into the escarole and toss.
Enjoy with Love,
Catherine

This looks so good. I've been eating more beans and a lot less meat lately and this would be a very nice supper. Keep cozy!

Catherine, For me at least, this would be really different. But it looks and sounds good... I like the garlic and heat you added to give it a little bite! Take Care, Big Daddy Dave

That's an interesting combo, and I like all of the ingredients. I bet it's delicious!I may have to cut back on some of the spice, though! I'm a wimp when it comes to spicy foods - a little 'kick' is ok, but not too hot!
Tanya Walton says
Well...I'm not really a bean lover so I think this one I would either have to moit that ingredient or give it a miss. I think it would be great without the beans mind you!!!
