Some foods are just so good and comforting and yet so simple.

Ingredients:

10 chicken thighs - with bone in
2 cups of all-purpose flour
1 cup of corn meal
1 cup of milk
1 tsp. Salt
1 tsp. black pepper
1 tsp. garlic powder
1 tsp. paprika
Olive oil
Preheat Oven 350 degrees:
Add one cup of the flour to the cornmeal; add the seasonings and toss.  Leave one shallow bowl with the other cup of flour.
Set up three shallow bowls; one with the seasoned cornmeal and flour mixture, one with the milk and one with the plain flour.
Dip the thighs first in the plain flour, then the milk and finally in the cornmeal flour mixture.
Place the chicken thighs in a baking pan and drizzle olive oil over the thighs.
Bake 45-50 minutes or until golden and the juices run clear.
Enjoy with Love,
Catherine

Love these. So much healthier (and easier) than frying. Frying can make such a mess. Thank you for sharing! And thank you for all your sweet words.

    Dear Catherine,
Your Oven Fried Chicken Thigh recipe is very simple, as you said. Simplicity is the best and the most delicious. No only time wise, but the flavors come out so much nicer. I have some chicken thighs in the freezer, so this would be a great recipe for dinner one evening. Thanks for sharing...
    Blessings, Dottie 🙂

Catherine, We love chicken thighs but we've never oven fried them or used corn meal as part of the coating. We should try the oven fried method and I know we'll try the cornmeal as a change of pace. Thanks and Take Care, Big Daddy Dave

I'll do chicken breasts rather than the thighs. Yummy.

Have a fabulous day Catherine. Big hugs. ♥♥♥
