The fresh basil is flourishing this year, (yeah!!). I love basil. I think that it can be used in everything. It adds a unique, distinct flavor that always seems welcome, even in desserts.
Therefore, with this welcome bounty I will be using my imagination to incorporate this delightful treasure.
I will leave you with this thought for today; my mom was a philosopher of sorts, though she never knew it. She often said, "Sometimes the words not said are the wisest". I did not understand that as a young girl, but I do now. A "little food for thought".
1 cup milk
½ cup chicken broth
3 cloves garlic - chopped
½ cup grated Parmesan cheese
½ cup fresh basil - chopped
Juice of 1 lemon
3 tablespoons butter
1 tablespoon olive oil
½ tsp. salt
¼ tsp. black pepper
¼ tsp. red pepper flakes
1 lb. of your favorite macaroni
Heat an 8 - 10 inch sauce pan with the butter and olive oil. When the butter is melted add the garlic and sauté when the garlic is fragrant and slightly browned; add the basil and lemon juice, milk and chicken broth. Simmer on low while adding the seasonings.
Prepare the macaroni as directed.
Just before serving add the grated Parmesan cheese to the sauce.
Place the macaroni in a serving bowl, top with the sauce and an extra drizzle of olive oil, dash of red pepper flakes and extra grated cheese.
